How does Death Assign each Reaper with souls to harvest?

There is not a simple answer to this question. Each reaper has a different method with which Death bestows the burden of retrieving the life essence of a being. The nomenclature varies for the energy itself. Some mortals attribute the word soul, others call it their inner core, some mortals call it their spirit or vital spark. The life force is the same in the end. A reaper will be assigned to collect it.

There are a select few reapers that are assigned immortal and supernatural beings. This is our bounden duty. The collections are more delicate and precise in comparison to mortals. Once the pathway is open they walk together until the story is concluded.

Where do your reapers take the souls they harvest?

That is dependent on the life harvested. Death will depute the final separation. The energy of the universe purifies each soul harvested in a unique form of elutriation (process of washing them clean). The length of time varies dramatically. The newly cleansed souls are sown into the realms that draw them in most urgently. Then their new story begins.

The residual grit is discarded into the void between worlds where the waters extend far beyond anyone's imagining.

What is the hierarchy of the different types of supernaturals that have been lurking in the shadows with the Reapers?

The concept of hierarchy when discussing immortal and supernatural beings is prejudicial. They each exhibit their own traits that have evolved their civilisations in a way that suits their necessity. It has been well documented that there are rivalries between the species but that does not equate to superiority over others.
